Additional Information: Nick and Amanda Swift set out to create an American version of a Speyside Scotch. The resultant whiskey succeeds in capturing the essence, but with a uniquely American flair. Using malted barley from Scotland, this core expression is aged in Bourbon barrels, then finished in Oloroso sherry casks. The NAS dram is young but well apportioned, achieving a maturity that belies is youth, proving that two years of aging in the Texas heat compares positively to whiskies matured longer in the mild Scottish climate.

Impressions:
Swift Texas Single Malt Whiskey pours pale gold with a hint of haze in the glass and bottle. The nose is initially soft and reserved, showing notes of maple, caramel, buttered toast, and coconut backed by hints of dried savory herbs. Hand warming releases more of the mid-sweet aromas such as chocolate and vanilla, along with cereal maltiness and finally some sherry. The initial palate sense belies its 43% ABV- warm but not fiery. The sherry is subtle, resulting in more of a wine-like presence. Slightly drying, the mid-palate reveals toasted coconut, more vanilla, mild oaky tannins, and a little more sweetness. The finish is relatively short, still showing very little heat, but exhibiting a slight roundness that gives a smooth, although light mouthfeel. The aftertaste hints of orchard fruits, vanilla, more malt, and a distant sense of smoke.
Overview: A solid malt- light, youthful, and reserved, with subtle flavors and a light, clean finish.
